Swedish Pancakes recipe
3 large or jumbo eggs
1/4 cup sugar
1 cup sifted flour
2 cups milk
Beat the eggs and sugar
Add the milk, then the flour and beat with an egg beater until foamy.
Heat a Teflon fry pan.
Swipe the pan with butter. (use a stick of butter)
Immediately ladle about 1/3 - 1/2 cup of batter into the pan.
Tilt to spread batter all over pan so it covers the whole bottom and comes up a bit on sides.
Cook pancake until it sets and is getting crispy on sides.
Lift up with a table knife to check on browning and flip over and cook on second side.
Serve with lingonberries and / or sugar.

Around the tree
The whole gang around the Christmas tree: Jim, Cynthia, Brendan, Brock, Allie, Karen, Bruce and Danny.
Houston houses are huge!
Everything is big in Texas! Dan and Karen's house is so big I fear their kids could get lost there. The living room is decorated with a full-sized totem pole. And the ceiling is higher still! Texas multi-story ceilings make for a lower AC bill. Beyond is a giant indoor pool. We all enjoyed a great dinner and lots of catch up chit chat.
Texas is big, brawny and beautiful
I never cease to be amazed by how Texas does everything on such a grand scale as evidenced by the Aquarium restaurant in Kimah where the entrance stairway displays exotic fish. In the morning the fish are hand fed.
December in Texas is warm :-)
A warm reception in Houston. The weather is warm too. It will be 80 today. Cynthia loves Christmas and her whole house is decorated.
